Yakhni Pulao
Yakhni pulao is a traditional Indian recipe made with meat ,rice and aromatic spices.This recipe has authentic taste that your family and guest will love.In yakhni pulao or pilaf the spices are cooked with mutton .The stock of mutton gives the rice extra flavour. This recipe is served with raita or salad.
Yakhni Pulao Recipe | How to make Yakhni Pulao | Pulao Recipe
Ingredients
- 1 Kg Mutton
- 700 grams Rice
- 250 grams Oil/Ghee
- 500 grams Onion (Sliced)
- 2 Big size Tomato (cut into big pieces)
- 100 grams (2tbs) Ginger Garlic Paste
- 200 grams Curd (Yogurt) (Whisk in a bowl)
- 2 medium size Potato (cut into big pieces)
- 4 Green Chillies (slits)
- 1 cup Mint Leaves (Pudina) (chopped)
- 1/2 cup Coriander Leaves (chopped)
- Salt to taste
- 1 Lemon
For Potli
- 2 Cinnamon sticks
- 8-10 Green cardamoms
- 12-15 Black peppercorns
- 10-12 Cloves
- 2 Black cardamoms
- 3-4 Bay leaves
- 2 tbsp Coriander seeds (roughly crushed)
- 2 tbsp Fennel seeds
- 2 tbsp Caraway seeds (shahi jeera)
To make paste of whole spice
- 1 tbsp Cumin
- 1 tbsp Coriander seed
- 1 Cinamon Stick
- 1 tbsp Caraway seed (shahi zeera)
- 2 Black cardamoms
- 7-8 Cloves
- 8-10 Black peppercorns
- 4-5 Green cardamoms
- 1/2 Mace
- 1/2 Nutmeg
Instructions
Preparation
- Rinse the rice and then soak it for 30 minutes.
- Cut the meat into small pieces and clean it properly.Wash it with water.
- Sliced the onion,tomato.
- Chopped the coriander and mint leaves.
- Peel the potatos and cut into big peices.
- Take a clean cloth and place the spices mention in the ingredients of potli.(Cinnamon sticks,Green cardamoms,Black peppercorns,Cloves,Black cardamoms,Bay leaves,Coriander seeds, Fennel seeds,Caraway seeds (shahi jeera))
- Paste the remaining whole spices in mixture grinder.(That is also mention in ingredient section)
Making Mutton Yakhni Pulao
- In a pan heat half oil and add the potatoes and fry till very light brown.Remove it from pan and keep it aside.
- In a same oil add sliced onion and saute till light golden.
- Separate the half fried onion and keep aside.
- Saute remaining onion for few minutes then add mint and coriander leaves ,saute for few minutes and then stop the flame. And keep aside.
- Heat the remaining oil in pressure cooker, add the mutton pieces,half fried light golden onion .
- Add salt according to taste and saute for few minutes.
- Add ginger garlic paste and saute for few minutes.
- Add whisk curd and saute it for few minutes .
- Add the prepared whole spices paste and potli.
- Add tomatoes and green chillies. Saute for a minute.
- Add add sufficient water.Pressure cook till the meat become soft and tender.
- Heat the pan and add the yakhni stock with meet. ,add saute potatoes and saute onion ,mint and coriander mixture.
- Adjust the quantity of water according to stock .
- Add Soaked rice and salt according to taste. Stir well .Add lemon juice.
- Cook the rice uncovered till the water dries up.
- Cover the pan and cook the Yakhni Pulao on low flame for 15 minutes or till rice is done. Then switch off the stove and it is ready to served.
- Serve Yakhni pulao either by raita or salad.
Notes
Use long-grained rice and short-grained rice.
Adding lemon juice into rice make the rice texture better .
