Classic fluffy pancakes are a beloved breakfast staple known for their light, airy texture and slightly sweet flavor. Made with simple ingredients like flour, baking powder, eggs, milk, and butter, these pancakes are quick to prepare and endlessly customizable with toppings like maple syrup, fresh fruit, or whipped cream.
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
In a separate medium bowl, whisk the milk, egg, melted butter, and vanilla extract until smooth.
Pour the wet mixture into the dry mixture .Stir gently with a spatula or whisk until just combined. It's okay if the batter is a little lumpy—don’t overmix, or your pancakes may turn out tough.
Let the batter sit for 5–10 minutes while the pan heats up. This helps activate the baking powder for maximum fluffiness.
Heat a non-stick skillet or griddle over medium heat.
Lightly grease with butter or oil.
Pour ¼ cup of batter onto the hot pan for each pancake.
Cook for 2–3 minutes, until bubbles form on the surface and the edges look set.
Flip carefully with a spatula and cook for an additional 1–2 minutes, until golden brown on the other side.
Repeat same procedure with remaining batter.
Stack the pancakes on a plate and serve warm. Top with maple syrup, fresh berries, sliced bananas, whipped cream, or a pat of butter, as desired.
Notes
Batter Consistency: If the batter feels too thick, add 1–2 tbsp more milk. If too thin, add 1 tbsp more flour.
Keep Warm: To keep pancakes warm while cooking, place them on a baking sheet in a 200°F (93°C) oven.
Variations: Add blueberries, chocolate chips, or sliced bananas to the batter before cooking for extra flavor.
Storage: Store leftover pancakes in an airtight container in the refrigerator for up to 2 days. Reheat in a microwave or toaster oven.
