Marry Me Chicken is a creamy, one-pan chicken dish made with garlic, cream, parmesan, and sun-dried tomatoes. The name comes from how delicious it is—people joke it’s so good, it could inspire a marriage proposal!
1/3 cup sun-dried tomatoes in oil drained and chopped
1 tsp dried oregano
1/2 tsp red pepper flakes (optional)
1 cup chicken broth
1 cup heavy cream
1/2 cup freshly grated Parmesan cheese
Salt and black pepper to taste
Fresh basil or parsley for garnish
Instructions
Season chicken breast pieces with salt and pepper.
Coat each chicken breast in flour, then shake off the extra. This creates a light coating that helps the chicken get crispy.
To sear the chicken, warm the butter and olive oil in a large skillet. Add the 2 chicken breasts and cook for 4-5 minutes per side . When they're crisp and golden brown, transfer the chicken to a plate. Repeat the process with 2 tablespoons butter, 1 tablespoon oil, and the remaining cutlets.
In the same skillet, reduce heat to medium, add another pat of butter and oil. Add the minced garlic, sun-dried tomatoes, oregano, and red pepper flakes (if using). Sauté for 1 minute until the mixture is fragrant. Pour in the chicken broth, scraping up any browned bits from the bottom of the pan.
Stir the heavy cream and grated parmesan cheese into the sauce and cook for another five minutes to help the flavours meld.
Return the chicken to the skillet, spooning the sauce over the top. Cook for about five minutes to thicken the sauce and chicken is heated through. Garnish with fresh basil or parsley and serve immediately.
