Preparation
Wash capsicum and potatoes and then drain the water.
Cut the capsicum into thick strips or you can cut as per your requirement .
Peel potatoes and cut them also in thick strips or cut as you want.
Chopped the onion and tomatoes.
Making Aloo Shimla Mirch
Heat oil in pan or kadai.Add cumin and let them change colour.
Add finely chopped onion and cook until they turn golden brown.
Add ginger garlic paste and sauté for a minute.
Add chopped tomatoes with pinch of salt and fry until they turn soft.
Add turmeric powder, red chilli powder, coriander powder, cumin powder and sauté for a minutes or till it separate oil.
Now add potatoes and mix well.
Add 3/4 cup water and mix well.Let it come to boil ,Low the flame ,cover and cook till the potatoes are ¾ cooked.
Add capsicum and add salt then mix well. Cook for 4-5 minutes or till both potatoes and capsicum cooked.
Add pinch of garam masala and mix well.
Add chopped coriander.
Serve the aloo shimla mirch with roti or phulka or you can serve it as side dish.
Notes
If you like peanuts in vegetables then you can add roasted and grinded peanuts. It will give you a delicious taste.
