Dalcha

Dalcha is one of the famous dish due to its unique taste. Dalcha is made with mutton ,lentils, vegetables and bottle gourd. It taste tangy because of tamarind. The tangy taste of dalcha makes it very delicious. It is most famous in Hyderbad. It is also famous in different cities of India.

Dalcha is serve with rice . The rice is known as Bagara khana .

Here in this recipe I have made dalcha with toor/toovar (yellow lentils) and masoor daal (red lentils).Dalcha can be prepared with chana daal(split chickpeas).

Ingredients

  • 1/2 kg (500grams) Mutton
  • 3 small cup Yellow lentil (Toor Dal)
  • 1 small cup red lentil (Masoor Dal)
  • 1 big cup fenugreek leaves (Methi)
  • 1 big cup spinach (Palak)
  • 1 medium bottle gourd
  • 2 tablespoon ginger garlic paste
  • 1 teaspoon turmeric powder
  • 2 teaspoon red chilli powder
  • 1 -1/2 tablespoon coriander powder
  • 2 big tomato
  • 3 medium onion
  • 1/4 cup tamarind
  • 2 black cardamom
  • 1 cup coconut
  • 2-3 tablespoon oil
  • 1 teaspoon Salt As per the Taste

Preparation

  • Wash the mutton and clean it properly. If there is any big piece then cut it into medium piece.
  • Wash fenugreek leaves and spinach in running water, then chopped it .
  • Cut onions into slices.
  • Chopped tomato into small pieces.
  • Take a lukewarm water and soak the tamarind into it.
  • Grate the coconut, then roast it on tawa.
  • Make a fine paste of roasted coconut and black cardamom.

How to Make Dalcha

  • In a pressure cooker, take mutton pieces add ginger garlic paste, salt as required and turmeric powder. Take three whistle or keep it on flame until mutton is soft and tender
  • Remove mutton from pressure cooker when it is ready , take yellow lentil and red lentil (Daal) in pressure cooker add water and turmeric and take 2 to 3 whistle until dal is tenderized.
  • Heat oil in vessel , add sliced onion and cook until it become light brown.
  • Add the mixture of coconut and black cardamom and saute it for few minutes.
  • Add chopped tomato, fenugreek, spinach and bottle gourd (Kaddu). Add the spices – Red chili powder, coriander powder, turmeric powder, cover it and cook until the bottle gourd becomes tender.
  • Once the bottle gourd becomes tender add dal and mutton and mix it ,pour some water as required maintaining the thickness of dal as per your need. Add salt to taste .Heat it for some time and add the tamarind pulp. Please note if the bottle gourd is not tender then you can make it tender by heating for some time in this step.
  • Stir it in between so that dal doesn't get settled down.
  • Serve it with the Rice (Bagara Rice).
