Flakes of poha should be thick to medium .Avoid thin flakes.
Wash the poha in colander. Drain the water . Poha flakes should be moist and soft but not mashed.
If you feel the flakes of poha is not much soft then sprinkle little water.
Cover and set aside to soften.
How to make poha
Heat oil in a pan and fry peanuts on medium flame until it become nutty and crunchy.
Remove the peanuts from pan and keep aside.
In the same pan add mustard seeds ,when they splutter add cumin seeds.When cumin seeds sizzle, add curry leaves onion.
Saute onion till they become translucent and soft.
Add green chillies and peanuts.Saute for a minute.
Add turmeric powder and mix well.
Add poha and mix well ,then cover the pan.
Cook poha on low flame for few minutes. Add salt according to your taste(If you feel that poha is dry then sprinkle little water.)
When poha become soft then turn off the flame and remove the lid .
Garnish poha with corinander leaves and lemon wedges.
Granish with also fresh grated coconut and sev or farsan.(optional)
Notes
You can add sugar into poha.Always choose thik flattend rice (poha),because thin poha is not suitable to make poha recipe.You can add vegetables into poha ,like potato, green peas.
